as I can change to the language ingles of plugins polls to another language, for example to the Spanish, if my geeklog has by defauld the Spanish language?

There is currently no Spanish language file for the Polls plugin. You'll have to translate it yourself.

Make a copy of /path/to/geeklog/plugins/polls/language/english.php, name it spanish.php and start translating.
