Is there a way to modify one of the config files to allow longer signatures?? (not pictures or html or anything... I just want to be able to use a few more characters because the quote I want to use gets cut off)

I'm not sure what size limit your running into, but the max size for a signature in the database is 160. You can change that, but you might have to change a couple of other things (size of the signature submission field in themes for instance).
