In the new demo, topics are arranged in an alphabetical order and I don't seem to find a way for a manual order.

Also, why does commenting still takes place in a new page?

Alphabetical is the default order for Topics.

To change this you need to go to the Geeklog Configuration and search for "Sort Topics" and switch it to "By Number".

For comments on the same page you would be looking for in the configuration "Comment on Same Page" and "Show Comments at Replying".
