First I want to say I love geeklog and its great keep up the good work... 2nd I herd php is a memory hog compared to any other web language which is fine because its alot faster (I was reading aarticle that php is 6X faster than cgi). But Heres the question.. For a web server I was wanting to get a Server Appliance like a linux box or cube do you guys reccommend those or should I get a regular machine with lots of ram? What do you guys perfer and why? Or should I run it on windows machine?

Windows servers are no fun at all..they are less stable than their Linux counterparts and can have all sorts of problems running ported software which was designed for Linux (apache, php, mysql, etc). Server appliances like Cobalt's RaQ, well, I wouldn't recommend them either. They tend to be slower and *much* more expensive. Plus, with all of their modified software, keeping them up-to-date (secure) can be a pain. However, their built-in administration software can make life easier for someone who would rather not learn Linux, etc. A normal box with plenty of RAM, running Linux, would be my recommendation.
For my own webhosting, I use a dedicated server provider called RackShack[*1] . For $100 per month, I get a very powerful Linux box (Pentium III @ 1gHz, 512MB RAM, 40GB HD) run on one of their shared 100mbps lines. I love this, and would recommend it if keeping a DSL-connected server in your closet isn't your method of choice. Well, hope this helps. If you'd like to discuss this stuff further, let me know.

I started
Iowa Outdoors[*2] on a pentium 133 with 256MB of RAM. The site did eventually outgrow the box but that was more of a disk space and processor issue than a RAM issue.

The reason people blame things on previous generations is that there's only one other choice.

Well I would just buy a dedicated server but I practically have a free t1 line thats barely used so I figure I would put it on that. Antoehr thing I forgot the mention is I figure this site having 9+ people on it at all times ( a pretty busy site). The site will have a good amount of pictures / video on it too and lots of forum talking. Ya your prob right about the cubes they are expansive for that they really are... I might just build myself a computer or buy a cheap computer form compusa and fill it up with ram.

You think t1 would be too slow?
